I have to admit, I throw organic cereal bars at my kids way too often in the mornings. They’re so dang convenient! During the week, it’s all I can do to get some form of food into Hayden before he makes it to school (a few minutes late…) Believe me, I know how cray-cray that morning routine can be! But I have a super quick and easy, allergy-friendly breakfast idea that is sure to please.
Grab a box of your favorite gluten-free (dairy-free and egg-free options are also available) frozen waffles and after toasting, spread a little of your favorite nut-free spread on one side of each waffle. Add slices of your favorite fruit (I used strawberries and bananas.) Drizzle with brown rice syrup or your favorite natural sweetener and sprinkle a few chia or flax seeds. Voila. The perfect kid-friendly, allergy-friendly breakfast sandwich!
These are best eaten with a fork because of the drizzle, but if you’re looking for a less-messy (and more car-friendly) version, skip the syrup. ;)
And if your family loves breakfast for dinner like mine does, add some uncured turkey bacon and apple slices to fill up that plate for your big eaters (ahem, hubbies…)
Be creative with trying different fruits inside the waffle-wich like sliced apples, pears, and other berries!
