If you know much about me, you know that feeding my family natural, healthy foods is important. I carefully select our foods to make sure that I am making the best choices possible without growing/raising it myself! It’s always a struggle to find brands that meet my standards but shopping at Sam’s Club today, I was happy to find NatureRaised Farms® Boneless Skinless Chicken Breast Portions in the frozen section. Their chicken is 100% natural* with no hormones, antibiotics or steroids** used and this is a requirement for me when I am shopping for meat for our family.

Asparagus Stuffed Chicken with Garlic and Sage Crust Recipe

For dinner tonight I came up with a delicious and healthy recipe using NatureRaised Farms chicken and some fresh sage straight out of my own garden. (Don’t tell but it may be the only living thing in my garden at the moment…ha!)

Asparagus Stuffed Chicken with Garlic and Sage Crust

While the chicken was thawing I made my sage and garlic rub by adding chopped sage, minced garlic, pink himalayan salt (or sea salt) and olive oil to a small bowl. I then pounded the chicken to about 1/4-1/2 inch thickness with a mallet (a wooden rolling pin would work in a pinch!) I used a few small asparagus per breast and rolled them up then fastened with a toothpick. Then I coated each stuffed chicken breast with the sage/garlic rub and placed in a glass baking dish.

I baked them for about 35 minutes at 375 (cooking times will vary based on size of the breasts you use.)

They came out perfect and I served them with mashed potatoes and yellow squash for a yummy and nutritious dinner that my family loved! I think hubs was just excited to see that we were having something other than spaghetti for once… ;)

Asparagus Stuffed Garlic and Sage Crusted Chicken

  • 2 tablespoons minced garlic
  • 2 tablespoons finely chopped fresh sage
  • 2 teaspoons coarse salt (I used pink himalayan)
  • 2 tablespoons olive oil
  • 4 NatureRaised Farms Boneless Skinless Chicken Breasts
  • 12 small, individual asparagus

Thaw chicken breasts and arrange on a cutting board. Pound chicken to about 1/4-1/2 inch thickness using a mallet or rolling pin.
Place 3 asparagus at one end of each breast and roll chicken around and fasten with toothpicks.
Place rolls in glass baking dish and bake for approx 35 mins until cooked through.
Remove toothpicks and serve.
