I love to cook, I really do. But after I became a mommy, I quickly realized that I didn’t have as much time to spend in the kitchen preparing meals. I still love to occasionally try a new recipe I’ve pinned to my ever-growing “food” board on Pinterest, but as a general rule I like quick and easy when it comes to meal prep. One of my favorite tricks is adding mix-ins to a box of mac and cheese. Adding a protein and veggie turns it into a dinner made easy, perfect for the kids to help with!

We eat a lot of mac and cheese for lunches, both mama and kids like it so I don’t have to make two different things (or grab a handful of nuts instead of eating a good lunch)! For this meal I added some rolled up nitrate-free salami and a cut up banana. The kids love it and I’m not having to beg them to finish their food.
And for a seriously yummy (and crazy simple) dinner, we added ranch dressing, frozen peas, and diced leftover rotisserie chicken. It tasted like a baked casserole and probably took 10 minutes to prepare. My kids love helping out in the kitchen so they helped add the mix-ins. These can be easily modified to your personal preferences and diet but I like adding a veggie (gotta sneak those in whenever I can!) and a protein like chicken.
It is great to give the kids a chance to help in the kitchen and when it’s an easy meal, it’s the perfect opportunity. Also, it keeps them from fighting while I’m cooking, which is always a win. :)
Don’t mind our pjs…we live in them during the day unless we go out to run errands. ;)
