Today, I am sharing one of my absolute favorite recipes. I’ve been making this taco soup ever since my mom gave me the recipe when I got married 9 years ago. In an effort to give credit for this delicious, amazing recipe I will say that I believe it’s a Longaberger (as in the basket company) recipe but don’t hold me to that. I changed up a few things to customize it for our family. Guys, this recipe is awesome. I make it for company because it’s such a crowd pleaser. Best part? This dish couldn’t get much more simple to make. E-zeeeeeeeee, people!
Takes about 30 minutes to whip it up (20 mins of that is just simmering), then top with a spoonful of sour cream (if you don’t have any dairy allergies) and some fresh chives or green onions (if you have them). I love to squirt some lime juice over it too, adds a little tang that is so yummy! And I don’t know why I used a spoon in these pictures because I definitely do not use a spoon to eat this soup. I scoop it up with tortilla chips, almost like a dip. Trust me, it’s amazing.

In the original recipe, it called for double the canned ingredients and a full pound of meat. This makes a lot of soup! Unless you are cooking for several people, this recipe is plenty for a family of 4. I recommend using homemade ranch and taco seasonings in this recipe because 1) I think it tastes better ;) and 2) it takes the guesswork out of what “spices” are used and makes it safer for those with food allergies. I found a super easy homemade ranch seasoning that works perfect in this recipe and don’t forget our homemade taco seasoning!
- ½ lb lean ground beef (or turkey) If you like a lot of meat, you can use a full pound.
- 1 can black beans, rinsed and drained
- 1 can pinto beans (not drained)
- 1 can petite diced tomatoes with liquid
- ½ bag of frozen corn
- 1 serving homemade taco seasoning
- 1 serving homemade ranch seasoning
- 1 cup water
- Brown meat until fully cooked.
- Add all other ingredients.
- Stir until well combined and bring to boil.
- Reduce heat and simmer 20 minutes.
