This pesto is great for snacking on with bread or bagel chips, but also yummy in sandwiches, pasta, and veggies!

The great thing is, you can switch it up and use a combination of your favorite greens to suit your own taste/needs.

Nut-Free Pesto
 
Ingredients
  • 2 cups basil (or a combination of your choice of greens like parsley, spinach, and basil.)
  • 2 cloves garlic
  • ½ cup quality romano cheese
  • ⅓ cup extra virgin olive oil
Instructions
  1. Toss all ingredients into food processor or blender and blend until pesto is a paste. You can add additional olive oil as needed to get desired consistency.

    You must try cilantro just once. We call it mexi-pesto at our house. It is divine in something with black beans and corn, like a pasta or a pizza.
